Something Interesting in a Good Way

I am waiting for life to surprise me with something interesting. Being an incurable optimist, I am sure something
good is just around the corner. In the meantime, I have been
reading everything that I can find by a southern writer, Lee
Smith and it is like a visit with my aunts.

I have also been making a lot of lemon meringue pies. They
are one of our favorites. I am following Laura's hint that
using half lard in pie crusts makes a better crust and it
really does. She is the supreme pie maker.

Bobby seemed better yesterday. I took him lunch and we watched a Russel Crowe movie. He will try to go back to
work half days next week.

Ted has finished his course of chiropractic treatments and
has an appointment with my doctor on Friday. The adjustments
got rid of his head and neck pain and the nerve pain but he
still cannot walk far and has impaired balance.

The weather is such a treat. It is so pleasant to be able
to work outside. I still have not gotten all the sweet gum
balls raked up but I have filled an entire garbage can with
them, one of the big ones furnished by the city. One of
the Lee Smith novels had a character using the noxious little balls as candles, floating them in oil.

My Aunt Edith would have made a great blogger. Her letters were always so full of the details of her daily life-where she went, what she ate, what so and so said. When she was in her 90s, she wrote to me Don't believe it when people talk about the Golden Years; getting old is HELL. Didn't everyone have an Aunt Edith? I had two.

This reminds me of that Ann Landers Lemon Meringue Pie recipe. I hope I saved the original news clipping in my cookbook where I found it last summer. Sometimes I get so carried away typing things into my database and then throwing away the original.

I like the one with water and egg yolks like my mother made but my kids say
it is too lemony and hurts their mouth. They like the one with sweetened
condensed milk.

Lemon meringue pie is my absolute favorite. I don't let myself have it very often. Last time was several years ago. Also, it isn't on many restaurant menus these days and that is another. Glad Bobby is doing better. Should I go to a chiropractor for neck pain? I am doing stretching exercises and such for my neck and it is better, but still hurts.

yes, he has elimanated Ted's neck pain and headaches but I think surgery is
the only remedy for the back pain he is experiencing.

Donna says that Atkins doesn't involve willpower since she doesn't have the food cravings she had when she ate carbs. Maybe it's because I'm such a good cook too! The only thing she really does without is potato and that doesn't bother her. Of course there are limits on a few things, like whole grain bread, but it's Ok now and then.

Once I got used to it, I was ok but the process nearly killed me. I like to
cook and do a lot of baking and bread making which is the enemy of any diet.
You can lose on the Atkins diet fast and without being hungry but the first
few days is brutal.

Use a pastry cutter if you don't have one. It helps and be sure to chill
the dough before you roll it out.

I have to google what these gum balls are, since you talk about them so much. I am glad that you are enjoying your reading and that Bobby is doing better and Ted as well. Enjoy the warmth! I know I am!

Reading my favorite southern writer, Eudora Welty, is like visiting with my great aunt Fan, who was from Birmingham, Alabama. Such a treat....
My Mom loved lemon meringue pies, too. And key lime pie....
So good to learn that Bobby is feeling better!
Feels like spring in Northwest Ohio!

Isn't it fun to read the same expressions that you heard all through your
childhood. Try some Lee Smith, it is almost the same voice, only more
contemporary.

Nothing like the natural thing. Holly has Mother's old Betty Crocker cookbook from the 50's and it naturally suggests lard for pie crusts. She uses it for all her favorite cake and pastry recipes.

We scorned lard for years and I know it isn't very good for us but it sure
makes a flaky, tender crust.

Lemon meringue pie... chocolate cream pie... I make apple pie because the apples are for all practical consideration; free. I tell Donna that I'd never make it as a chef because I can't handle the pastry station. She does the final prep of the crust for me--adding water and rolling, but I can understand why she doesn't like doing it since she doesn't eat the stuff these days.

Apple pie is our favorite but good pie apples are scarce around here. If I
can get good Granny Smith's they work. I admire Donna's willpower. It is
hard to stick to the Atkins diet but I know it works because I have done
it a time or two. Bobby is on a high carb diet and that is a little tricky.

Now we know why our grandmothers made such great pastries. I got a bottle of
fine imported olive oil and I thought of you. It is so fragrant and tastes
so good.
