I got this off the back of the Ritz Cracker box, years ago. It's delish!
Savoury Salmon Ring:
1 (15 1/2 oz)can salmon
1 (10 oz)can cream of mushroom soup
1/2 cup finely chopped onion
1/4 tsp pepper
1 tsp rosemary
1 tbsp lemon juice
2 tbsp snipped parsley
2 eggs, lightly beaten
36 Ritz Crackers, finely rolled (about 1 1/2 cups of crumbs)
Combine all ingredients & mix thoroughly. Turn into a well greased 1 quart ring mould or cassarole dish. Bake at 350F for 50-55 minutes. Unmould on platter & garnish with greens & lemon wedges. Serve hot or cold with parsley sauce or sour cream dressing. Makes 4-6 servings.

Save the buffalo hair for me and I'll knit you some lovely warm winter wear. I could have bought two alpacas for only $250.00 but I don't think the city by laws allow alpacas; chickens and bees but not alpacas. I wonder what the pack of dogs next door would have thought of that smell.
