Ritz Cracker Recipes

From Recipe Lion website, some recipes calling for Ritz Crackers.

Ritz Cracker Moon Pies
Yields: 25

25 Reduced Fat Ritz Crackers
25 teaspoons honey roasted creamy peanut butter
25 teaspoons marshmallow crème
4 ounces milk or dark chocolate

Line 2 cookies sheets with parchment paper. Place 25 crackers on the cookie sheet then top with the 25 teaspoons of peanut butter and marshmallow creme. Refrigerate for 30 minutes to 1 hour.

Melt chocolate in a double boiler over medium low heat. Once melted, turn heat to low to keep chocolate warm.

Using two teaspoons, drop one peanut butter marshmallow covered cracker in the chocolate using the spoons to coat it with chocolate. Lift the cracker out of the chocolate shaking off excess chocolate. Place on the parchment paper and repeat with remaining crackers.

Refrigerate until cooled and the chocolate is hard, about 20 minutes. Store in the fridge or freezer in an air tight container.

Except that I don't have any Ritz crackers, I could have made this for supper tonight.

Corn Casserole

Serves: 4

1 can (17-ounce) whole kernel yellow corn
3/4 cup milk
1/4 cup butter or margarine
1/3 cup cornmeal
3 eggs - separated
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/3 cup sliced green onion
1/2 cup crushed ritz crackers
2 tablespoons butter, melted

Preheat oven to 375 degrees F.

Combine milk and butter in a pot. Bring to a boil. Slowly stir in the cornmeal. Bring to a boil and cook 3 minutes, stirring constantly. Remove from heat.

Stir in egg yolks, baking powder, salt, cayenne pepper, green onions and corn.

Beat the egg whites until stiff. Fold into the corn mixture.

Pour into a greased 1 quart baking dish. Mix melted butter and ritz crackers. Spread over top of casserole.

Bake for 30 minutes or until golden brown.

I've never tried mock apple pie made with Ritz crackers, but the recipe has been around so long, it must be good.

Ritz Cracker Pie

2 cups water
1 1/2 cups sugar
2 teaspoons cream of tartar
25 Ritz Crackers, crushed
1 teaspoon butter
1 teaspoon cinnamon
Pastry for two-crust pie

Combine water, sugar and cream of tartar. Bring to a boil.

Add Ritz crackers and boil for 2 minutes without stirring. Pour into shell.

Dot with butter and sprinkle with cinnamon. Top with crust.

Bake at 400 degrees F for 15 to 20 minutes.

I got this off the back of the Ritz Cracker box, years ago. It's delish!
Savoury Salmon Ring:
1 (15 1/2 oz)can salmon
1 (10 oz)can cream of mushroom soup
1/2 cup finely chopped onion
1/4 tsp pepper
1 tsp rosemary
1 tbsp lemon juice
2 tbsp snipped parsley
2 eggs, lightly beaten
36 Ritz Crackers, finely rolled (about 1 1/2 cups of crumbs)
Combine all ingredients & mix thoroughly. Turn into a well greased 1 quart ring mould or cassarole dish. Bake at 350F for 50-55 minutes. Unmould on platter & garnish with greens & lemon wedges. Serve hot or cold with parsley sauce or sour cream dressing. Makes 4-6 servings.

It does sound good! Thanks! There is something special about Ritz crackers, no substitute for them.

I like those good corn casseroles so I will be sure to try it out. I have never
tasted the mock apple pie. My mother used to make a mock lemon pie
with vinegar.

I've never tasted Ritz cracker pie, either because it sounds like a waste of a pie crust. I've made vinegar pie, and it reminded me of a chess pie more than anything.
