Portuguese Kale Soup

I can't get enough of this soup I made the other night. I doctored it up a bit, but basically, the recipe came out of a Nov. 1999 issue of Organic Gardening magazine.

Full recipe follows (I cut it in half and got 3 meals out of it.):

1/2 pound linguica or chorizo sausage (or any garlicky
smoked sausage), sliced (I like chorizo)
4 medium-size potatoes, peeled(?) and diced
6 cups chicken stock or broth
1 onion, diced
4 garlic cloves (says minced, but I just cut them up)
4-5 cups choped kale (I grow my own potatoes and kale)
salt and pepper (to taste)

Boil potatoes and mash for an uneven and lumpy texture.

Combine chicken stock, onion, and garlic and boil.

Add potatoes, sausage, and kale to the stock for a couple of minutes (high heat), then reduce heat. Simmer for 15 min. minimum. Add salt and pepper (I tossed in fresh garden chives). With chorizo, you really don't need salt. Too much sodium as is. 390 calories per serving.

I've printed this recipe, and it's hanging on my fridge door. Will buy chorizo tomorrow, and make it with home grown purple potatoes (used up all the regular coloured ones for Thanksgiving), kale, onion and garlic, and home made chicken stock. Might have to take a picture of it. It's going to be an interesting colour.... I covered my brassicas with floating row covers this year, and it worked well until everything grew tall enough to remove the cover itself! Still got some worms, but the crop was far more edible. Mostly dried the kale for kale chips.

I love Kale - over here it is 'spring cabbage' ((I think, I have the same vegetable)

Yep.... it is me again. I bet you thought I had left your life for good. Nope.... I'm still around and just as feisty as ever.

Okay.... so the soup recipe does sound kinda good and healthy, too. Personally, I'm on an Italian kick lately. If you were on Facebook, you would already know that information. And... why aren't you on FB?

Whoa Nellie! From out of the past.... And I just deleted your name from my friends list. Hope you're doing well. This soup is really good (with chorizo), worms and all ( I think I got them all out). I come and go on the "feisty" attitude. I'll write a controversial post, get slammed, then regret it, swearing I'll never write another, but off I go again. I know that's what has split us apart in the past. Forgive me?

My cooking revolves around what I have in the garden, plus meat on occasions. Lots of greens and red/oranges (beets, carrots, sweet pots., tom.). I love stir frys (fries?). Simple, but effective.

Yeah, the sodium part is not good. I think I could cut back on the sausage quite a bit, and it would still taste great.

This seems simple enough, except I don't know what kale is except it is green and leafy (right?) so I will ask at the market. I think the calorie count depends on if you pick out all the sausage and eat it first.

At least with store bought kale, you shouldn't have to worry about "cabbage" worms. I don't spray, so I have to soak it (and broc, etc.) in salt water, then pick them out--a real hassle. But it's worth it!
