Chicken Every Night

Mike made this when he and Fredo were here and it is very
good.

Melt In Your Mouth Chicken

One half cup parmesan cheese
l cup Greek yogurt..plain
1tsp garlic powder
1 teaspoon salt
one half tsp. pepper

Thin the yogurt with sherry or white wine.
We also put a piece of rosemary on the chicken.

Spread on chicken breasts. and bake rough ly 45 minutes.

Oven Fried Chicken Thighs.

This is simple but good. Coat the chicken with plain yogurt.
salt and pepper and coat with crushed cornflakes. It tastes
like fried chicken and transforms the thighs.

It sounds so easy, right up my alley. Am printing it out right now. My meal repertoire is so skimpy, this will help a lot. Ed says if I serve him any more chicken, he'll start to cluck, but that is not so. Tonight, he gets the chicken breasts he has been avoiding all week.

P.S. I assume you mean bake at 325 degrees, right? Also, the Parmesan should be grated.

Try the chicken thighs or use breasts if you don't like thighs. It is fast easy
and healthy.

The yogurt makes the chicken better. The old southern custom of soaking
chicken in buttermilk makes it taste better too. I don't think there would
be enough cornflakes to dynamite Donna's diet.

That reminds me, I need to get a chicken out of the freezer. I roasted one last week, and made good broth from the bones to cook those German style noodles I bought at your Aldi's store.

Donna would not recognize the cornflakes.It is almost liked bread crumb.It was yummy and had this the other night.The rest we are making or Mike is making chicken salad.

I usually just put garlic powder or soy sauce om my thighs. Yogurt sounds like a totally new taste, although Donna won't eat the corn flakes.

Yogurt removes the gamy taste and soaking in buttermilk does the same
thing. When I was in the hospital years ago, the dietitian told me about
this method of cooking chicken with yogurt and we can hardly tell it
from fried chicken.

Needless to say probably, but you bake the chicken thighs at 400 degrees
until thoroughly cooked.
