Supreme Soup

This makes a huge amount of soup. I gave half of my batch
to Ellie. If you are alone or just two, you need to divide
and freeze some of it. It is the best soup I have ever had
but it is guaranteed to be bad for you.

Chicken Enchilada Soup
2 cans of green enchilada sauce (big ones)
4 cooked and boned chicken breasts.(reserve the broth)
l can of corn
l can of black beans with jalepenos
l cup of the chicken broth
l small can diced green chilis
l lb velveeta cheese
easy and most of the ingredients can be kept on hand.
Just before serving add a half pint of whipping cream. I
don't particularly like velveeta but it works much better
than cheddar in this recipe.

This is a perfect soup for after a football game. I serve
it with corn chips.

Safeway had their Deli's Signature Soups on sale and I brought home a tub of Enchilada Soup and it was nowhere as good as yours. I think they were trying to emulate the corn tortillas via some soggy lumps of bready stuff.

Sounds good but you gave no instructions. Are they supposed to be obvious? Personally I'd skip the whipping cream.

You dump it all in the pot but the cheese and chunk it up when the soup is hot enough to melt it.
The whipping cream is added just before you eat it.

The soup sounds delicious, I adore a really tasty bowl of soup on a chilly day - I could enjoy some right now actually

You could easily skip the chicken and it would be just as good in my opinion. Just add an extra can of black beans.
