Mexican Recipes Vegetarian

Baked Chili Rellinos
2 cans of whole green chillis
One half pound of cheddar cheese
2 eggs
2 cups milk
one half cup flour
l tsp salt.

Cut chili peppers into small pieces and place in the bottom
of a buttered casserole dish. Cut cheese into long strips and
arrange over peppers. Beat eggs, beat in milk and flour and
salt. Pour over cheese and bake at 350 for 45 minutes.
This recipe comes from my friend Phyllis and I would change
it by doubling the cheese.

Sopapilla Cheese cake

2 cans crescent rolls
3 80z cream cheese
one and a half cup sugar and two teaspoons vanilla
Top l can rolls with whipped cream cheese,sugar and vanilla and one
stick melted butter and top this mixture with the second
pan of rolls. Pour 1/2 cup of the reserved sugar and
cinnamon (as much as you like) on top.

The cheese cake is so rich but extremely delicious.

I like hotter chili's for the casserole but adjust to your
taste.

It is good. If you can get the green chillis fresh it would be better.

Sounds really good. Does that cheesecake get baked at any time, the crescent rolls maybe?
