Earthquake Cake and Doc Holliday

Spray a nine by thirteen inch pan and spread a cup of
coconut and a cup of pecans in the bottom.

Then prepare a German Chocolate cake mix according to
package directions and pour over the coconut and pecans.
then spoon the following mixture over the top of the mix.
l 8 oz package of cream cheese
l stick of butter
1 box of powdered sugar
l tsp vanilla
Bake 30 to 40 minutes a 350 degrees.
This is an ugly cake with a lot of craters and the men in
my family all love it.

After watching 6 or 7 versions of the gunfight at the Ok
Corral, my curiosity impelled me to find out what happened
to Doc Hollidays common law wife, Big Nose Kate. Charming name.
I love wickopedia. I was surprised to find that she lived
to be 90 years old, dying in l940, She was friends with
the Governor of Arizona. She and Doc had violent fights
that were legendary. Doc Holliday is my favorite western
bad guy. I am fond of westerns because the good guys
almost always win. I never get tense when watching them.
I can be certain they will turn out ok and characters
like Doc always have redeeming features.

i'm a fan of cake and pie and keep all at a distance except for special occasions and only if weight at the time leaves room for a cheat. wiggle room i call it. i liked westerns as a child but left all that behind. sometimes, a really good in-depth western comes along and those i watch. overall, i prefer sophisticated dialogue such as that in All About Eve or Hop Scotch (spy take-off with Walter Matthau).

I like old westerns too. And I have a thing for Lone Ranger episodes.

This reminds me of a recipe I have for Grand Canyon Cake - different colors of batter layered in the pan, and then create some craters in it when done. I have never made it, and don't know if I ever will, but enjoy thinking about it.

I am a pie lover so don't do cake often but the guys all seem to like
the earthquake cake a lot. I am more of a caramel fan than a chocolate
fan.

Didn't know you were a diabetic. If you can tolerate Splenda it is
excellent as a sugar substitute in baking. You would not be able to tell
the difference in zucchini bread.

A box of powdered sugar? Doesn't sound like something I should get involved in with Type II diabetes. But I did make two batches of zucchini bread this morning that even Donna says is excellent. Yeah, it has sugar, but not that much!
