Good Morning!

Yesterday started out pleasant enough and only got better from there.  Hopefully today will follow suit.    I did what I do best, Cooking!  I started off making a new recipe for Salmon Patties.
2 Cans Salmon, 1/2 onion, 2 cloves of garlic, process in food processer, add 1 1/2 cups of flour, 1/2 t salt, 1/4 t pepper and enough saltine cracker crumbs to make the dough stiff.  Shape into balls and deep fry until golden brown.  Drain the salmon!!!  Save the juice in case you need to add more liquid to make the dough perfect.
I then did a Costa Rican Tuna dish, just take some tuna, I used canned as I wasn't going to the store, LOL!  Cut  and quarter two onions and two large tomatoes.  Layer the tuna in the baking dish, top with the onions and tomatoes and add some soy sauce and rice wine vinegar to taste.  Cover and bake for 30 minutes.  This made a great cracker dip and was pretty easy to put together.
I then made a White Chicken Chili.  I boiled the chicken with the spices and diced tomatoes, 1 t cumin, 1 T chili seasoning, 1 small jalapeno diced.  I sauted one onion and two cloves of garlic in another pan and when the chicken was completely done I removed it and stripped the meat off, it all went back into the bigger pot with two can's of great Northern beans.  It was pretty yummy, even Ra loved it.
Next I made the easiest dessert ever.  1 cup self rising flour, 1 cup melted butter,  1 cup milk, 1 cup of sugar and one can of fruit cocktail, drained.  Mix all together and bake at 350 for 40 minutes or until golden brown.
Today I'm thinking of making Chinese.  I've got 8 cookbooks out with all different recipes marked and must decide what to make for sure.  Hubby loves eggrolls and so I think I'll start with those, but there is no telling where I'll go, from there.
Here are some pictures of Ra in the firesuit I won for him at work.  It makes it nice in the snow.  And he looks so cute!

I better get breakfast going and make my list for the store.  I'll be back.
Happy Cooking,
Sum
