I Don't Do Fast Food!

My son-in-law asked me to duplicate a taco recipe from taco bell. Now you think taco's so you think corn tortilla's, right! So I go shopping I buy pinto beans and put them on to boil as soon as I get home tonight. Then, stupid me goes on the taco bell website and finds that the recipe he wanted is for burritos. Too late, I'm gonna do it my way.

What a lot of people don't realize is that I cook from scratch. I don't buy mixes and such. I boil the beans and fry the burger and make my taco seasoning from cumin, paprika, chili powder and the key to the taste of taco seasoning is oregano. I mix them all together and use my immersion blender to make it a little chopped but not a paste. I make a cheese sauce and add a little homemade salsa to it. Then I heat my corn tortilla's on the gas stove burner and proceed to put them together. The way I took the burrito he wanted, that is now a taco is I heat a tortilla, add the cheese mixture and put another tortilla on that, then I put on the hamburg mixture, some chopped tomatoes and a little shredded cheese. They rocked. So tomorrow I'll make a lot up and take them to my son-in-law and see if he prefers mine to taco bells. Either way they turned out great. A lot of work but in the end well worth it!!

Hubby's been out for a few hours so I took some up to my neighbors and they loved them. I still have not mastered the art of cooking for two so there is enough to feed a family of 10.
