Chicken Marsala Recipe

3T olive oil
3 small summer squash, cut in one inch pieces
1 pt grape tomato's
6 t minced garlic
1/2 t each salt and pepper
2 lbs chicken tenders
1/4 C flour
4 T butter
1 eight ounce package mushrooms sliced
1/2 C chopped shallots
1 C Marsala Wine

Heat 1 1/2 T oil add squash and cook until lightly browned. Add tomatos, 3t garlic and 1/4 t salt and pepper. Heat tomatoes through and then put in a side dish and keep warm.

Salt and pepper the chicken with remaining salt and pepper and coat with flour. Fry in remaiing olice oil until cooked through. Remove chicken and add mushrooms, saute until tender, stir in shallots and remaining garlic, saute unti soft. Add the wine and reduce until half, add butter and plate up to your hearts desire. I made mashed potatoes but it would go well with egg noodles or rice. Whatever your preference.

I found this recipe easy, quick and simple to make and with very little effort. With my busy lifestyle easy, quick and simple is the only way to go.

It was really good, but the wine was the only Marsala I had available and it was from Ca. My girlfriend said it was dry but I found it to be a bit sweet. My girlfriend made it a few weeks ago and didn't like the wine. Hubby loved it.
