Low Calorie Vegetable Soup

I have been in a cooking mood all day and when I saw this
good recipe, I had to test it. It is delicious.

One and a half cups of chopped onion
2 tablespoons reduced fat table spread
1 tablespoon of flour
1 tablesspoon chili powder
1 Package of sweet corn thawed (l0) oz.
2 cups salsa
l can chicken broth
l 4 oz jar of pimentos
1 package cream cheese thawed.

Saute the onions in table spread until tender.Add all the
rest of the ingredients except cream cheese. Bring to a
boil and set aside. Put l/4 cup of hot soup into cream
cheese. mix well, Add to pan and reheat but do not let it boil.
I didn't have the frozen corn but I used two cans of
drained corn instead. it worked well.

I have discovered a wonderful ingredient that seems to have gone out of style and I am substituting it for "reduced fat table spread". It is called butter and is delicious.

When I buy cream cheese, it is not frozen. I assume this is okay for this recipe. I will let you know if I make this. Sometimes I get this frenzy of will and do something. And sometimes I don't.

Thanks for posting this recipe! Now that the chill is in the air, I want to make one big pot of soup after another.... This soup sounds so tasty!

It is good and has that Southwestern flavor. I used Pace mild salsa for Ted but I like it spicier and if making it for myself would have used the medium.

Well, that's interesting. Sounds like Paula Deen on a diet - she couldn't give up the cream cheese. There is that Neufchatel cheese that is lower in fat and works just like cream cheese. I think nowadays they have renamed it lower fat cream cheese because people are used to the low fat designation. I just happen to have some, and I am going to try this soup.

I don't think you will be disappointed. I used the low fat cheese and don't
think there was a speck of difference. It makes enough for two meals and
in this busy season it is an asset.
