Lovely Lemon Lush

As you know, I lead a very simple life and derive a lot of
joy in living from cooking, gardening and consulting with
my children about their problems.

I have discovered the most amazing recipe. It is labor intensive but it is one of the best desserts that I have
ever had. If you make it, follow all the steps because the
buttery crumb crust is wonderful.

2cups all purpose flour
l cup butter Blend with a pastry blender until it makes
a ball and can be patted into a pyrex pan. Let bake at
350 for twenty to thirty minutes. Set aside to cool.

Soften two packages of cream cheese. Add l cup powdered sugar
and a teaspoon of lemon juice. Blend on high with mixer.
Spread on crust.
2 packages of lemon pudding mix prepared as directed and
poured on top of cream cheese layer.


l container of frozen whipped topping or prepare your own
whipped cream.

Spread the cooled crust with the cream cheese mixture. Add
pudding mix that has been cooled. Then top the layers with
Cool Whip or whipping cream and refrigerate.

I cut the recipe in half for Ted and I. We like tart desserts and I made my own lemon pudding and will use real
whipped cream.

It well worth all of the steps. I plan to make it for special company like Laura and Fredo and Mike and for the
family reunion.

Cast your diet aside and enjoy!!!

I agree it sounds yummy. To assuage my craving for lemon meringue pie, I buy The "Temptation" pudding cups by Jello -- they make a lemon meringue pie one and a key lime one (80 calories a serving for these flavors). They also make a Double Chocolate Pie one, 110 calories in each cup. How can I go wrong? Although if I am ever in your area, I will drop by and will expect you to make this dessert and I will have some.

The puddings sound good and very economical on calories. I will try them.
There is something about lemon stuff that makes it feel light even when it
is not. I will make it for you if you come my way.

Cast it aside, indeed. What a fantasy of lemon-ness.The whole time I'm working on this quilt, I'm thinking of all the recipes I'd like to make. Not likely to happen because by then I'll have some other project. But it's fun to dream.

This looks very familiar, but it's not because I ever made it. I'd be a flop as a chef since I'd never get past the pastry station.

That crust is sooo good. I have eaten a similar dessert with oreo crumbs
on the bottom and chocolate pudding on top. This tastes light and summery.
