Salads

Lately my first meal tends to be a salad. I’ve lost the taste for shakes because the kind I need to make is green, and drinking green lumpy stuff, especially in the morning, is not appealing anymore. So the concoctions I make now I might get tired of soon, but they seem wonderful at the moment.

1/2 a boiled potato, chopped up
half-handful of grapes, chopped
some blueberries if I have them
cooked carrots if I have them ready (I slice them and microwave them a few minutes)
a few canned artichoke pieces
about a quarter-cup of bread & butter pickles, chopped up
chopped cucumber
a heap of shredded romaine or spinach
a hard-boiled egg if I have one ready
spoonful of some dressing — ranch, Italian, or Russian

If I make this for dinner, I can add tuna, chick peas, zucchini, corn, etc. The thing is to chop everything small so it mixes. It makes a good-sized salad so I usually have to put some away for later.

I think it's the pickles that make me like this. I’m thinking of adding this sweet pickle juice to other things, like stir-fried chicken.

I love peanut butter and dill pickle sandwiches for breakfast and that is very peculiar but once tried, it is addictive just as I imagine your salad would be. I can never get ingredients chopped fine enough to make a really good salad.

good grief, what a combination. I suppose now I'll have to try it. I am already having toast and peanut butter. It fills a need.

I have a full salad with my dinner meal every night starting with a whole head of lettuce or Romaine--add tomatoes, onions, mushrooms along with 'this 'n that' plus various dressings.

No green shakes for me, either.

I'll give your recipe a try some time - it's intriguing. I love what restaurants call "Chopped Salad" where everything is cut small. Somehow I never manage to get the same texture and taste at home, decided the prep of it calls for putting all the ingredients in a pile on a large cutting board and whacking at them with a big knife, and no regard for flying pieces because the restaurant kitchen in theory will be hosed down at the end of the day.

I don't chop it that small, just enough to spread out the pickles and to make the greens easy to eat. Because parts of it are cooked vegetables, it's easier.

Oh, no, not a drink. I've gotten kind of sick of shakes. This is a chopped salad. I'll take a picture if I make another later today.
