Tonight we have the second grandson over for a sleepover with the first grandchild, that we are raising, and we are making tacos, re fried beans and Spanish rice.
For the tacos I buy corn and flour tortillas because we like both hard and soft tacos. I use tomatoes, onions and cheddar cheese. I don't make them with lettuce because no-one ever wants lettuce on them. We fry up hamburger with chili powder and a bit of tomato sauce. Voila, a taco is born.
The re fried beans are easy. I take a pound of pinto beans and boil them til tender, then I use my hand blender and mash them up, after that I put a half of a pound of jack cheese in them and let it melt. Yummy!
The Spanish rice will be a bit bland tonight because the boys don't care for onions and peppers. I put 2 T of oil in the pot and add two cups of rice and fry it for about three minutes, I then add an 8 ounce can of tomato sauce and four cups of water, bring it to a boil and cover it. Turn the flame to low and forget about it for 20 minutes.
I have a cake in the oven for later and we bought popcorn to eat while we watch movies tonight.
Hubby and I are very excited to get the two boys together. They are the same age and get along famously. And we like having all the kids together. Have I mentioned that we have 12 grandchildren. They keep us young.
