Corn off the Cob

Swhew. Round one is over. I just did up a "batch" of corn for the freezer. It's a one ring circus in my kitchen.

First, I gather and dehusk the corn, boiling water as I go. I toss about 6 ears in the microwave and 8 in the hot water. After a minute per ear cooking time, I quickly cool them in ice water. Then I knife off the kernels while more corn is being boiled and zapped.

There's corn and cobs flying everywhere creating quite a mess. But come late winter, I'm loving the taste of "fresh" corn off the cob.

This particular batch of corn came from my daughter and SIL since 'coons have pretty much devastated my corn crop. I spent the afternoon two days ago helping them harvest and clean produce for them to sell at the local (Lafayette) outdoor farmer's market. It was hard work, but I enjoyed spending the day with them. Emily works all week as a dental hygienist, then does the farm chores, and collapses! Plus, she's pregnant (Oct). But, like her father, she sometimes doesn't know when to quit. I'm very proud of her (and him).
