It
was 44 years and a month ago that I joined Weight Watchers and lost a
100+ pounds and today I was knocked out by nostalgia all because
cauliflower was on sale!!
I
don't know how all this fits in with today's WW but unless you know
what I mean by 'all the #3s you want', 5 fish, 3 beef, 1 liver', '4
ounces of a #4' you won't know what I am talking about! I've written
many times before about my involvement with WW so I won't go into it now
but let me just say that I was in Winn-Dixie, saw that cauliflower was
on sale and ''mashed potatoes' popped into my head! I haven't thought of
that recipe in at least 30 years, bought the cauliflower came home and
started cooking up a storm.
When
you are fat, have a lot of weight to lose, it wouldn't surprise you to
find out that you believe what you wouldn't believe under regular
circumstances. Yes I believed that a can of tuna mixed with mustard, not
mayo, would taste like corned beef! I know that if I drained a large
can of mushrooms, spread them out on a cookie sheet, sprinkled some salt
or garlic powder over them and baked them to death they would taste
just like peanuts!! Boil all the fluid out of a can of tomato juice, add
spices, and you have an Italian sauce that you can toss over bean
sprouts or spaghetti squash and think you are eating the real thing. If
you believe that, and I did, I have some land in the Everglades I want
to sell you.
Okay,
back to the cauliflower that started all this. I cooked it up, drained
it, mashed it a bit, put it in the blender, added some dehydrated onion
flakes, pepper and a dash of garlic powder. I blended it until smooth,
put it in a pie pan and baked it in the oven at 350 degrees for a little
over an hour until the top was browned and black around the edges.
Tasted just like mashed potatoes--oh, okay, just a little!
Keeping
with the WW theme tonight I made up a batch of string beans with tomato
French dressing: tomato juice, vinegar, chopped green pepper,
Worcestshire sauce, dry mustard, garlic and sugar substitute all blended
together and poured over the beans.
Later
I will probably have the WW milkshake made with powdered milk, water
and chocolate extract and a cup of strawberries with Sweet 'n Low
sprinkled over them.
It was fun going back 44 years for a night but back to real potatoes tomorrow!
