We love Tex Mex and this is a soup recipe that never fails.
I try to keep the ingredients in the pantry at all times. It is fast and easy and delicious.
Chicken Enchilada Soup
1 can of chicken or cooked and
shredded chicken breast.
1 can green enchilada sauce
1 can green chilis diced
l and a half cans chicken broth
l cup shredded cheese
One to five chopped jalopena slices chopped
1 can black beans
1 can whole kernel corn
heat together and simmer ten minutes. When ready
to serve stir in l cup of whipping cream. serve with tortilla chips.
It is wonderful for cold days and so easy. It only requires opening cans. You regulate the hotness and can
make it heartier with another can of black beans. It is great for unexpected guests and when you have no time for cooking. It serves four easily.
