Wet Christmas!

It's been raining for a week straight and I'm not even in Oregon! My yard is one giant puddle. The friendly neighborhood skunk is taking shelter in my heating vent system. Jasper cat got a good dose of it first thing this morning. Merry Christmas kitty! Not sure if he'll need a bath or if it will wear off on it's own.

To make Christmas extra complicated I took it upon myself to make a meatless, wheat-less, egg-less, dairy-less, oil-less, soy-less lasagna. I just love impossible challenges! Here's a picture... (before baking). It was surprisingly satisfying, though it couldn't compete with the 'real deal'.

Dessert consisted of pumpkin squares topped with macadamia nut and date topping.


I am happy to be able to kick back and relax now. All in all it was a nice Christmas. Hope yours was too.

Those were rice lasagna noodles. I forgot to specify, but if you are fine with gluten, any lasagna noodles would have been fine.

Olives, eggplant, mushrooms, garlic, basil, salt, macadamia nuts, zucchini, spaghetti sauce, rice cheese, no-boil lasagna noodles, tomatoes. I think that sums it up! Mostly I'm just proud of myself that I could do it! I try to avoid soy because it has plant based hormones. Most of the vegan recipes called for tofu, but I managed to get by without. Go ME!

we have also had the rain rain rain! wish it had been snow! I don't return to work until next wednesday so every day is pajama day!!

It does look good and I ham surmising it is beans olives cheese and tomatoes?

No beans. I simmered minced eggplant, mushrooms, and olives in the olive juice until the liquid was reduced. I then ran soaked macadamia nuts, garlic, and basil through the food processor for more flavor and texture. The cheese is 'rice cheese', which I used on top and between layers. For the other filling I used zucchinis sauteed in the sauce, which came out of a can. The noodles were no-boil rice noodles.
