I've been enjoying cooking these past couple of months, in spite of my less than ideal kitchen. There is something so satisfying about tackling the challenge of nourishing your family in a way that also tastes good. I'm afraid we'd kind of gotten off track in the nutrition department in recent years, so I've got a lot of catching up to do.
Last night I made a traditional Indian dish called Aloo Gobi. It's made primarily with potatoes, cauliflower, tomatoes, and traditional Indian herbs spices. It was quite tasty! I'm doing some informal cooking training a la youtube!
One of the things that has helped me the most is to cook a large pot of something easy to keep that I can heat up on a moment's notice. It's my version of "fast food". The lima bean soup (if the picture comes out) is one of our favorites. I add spinach leaves at the end, just to wilt. These days we are adding greens to just about everything we make. Did you know that cruciferous greens are better for you cooked than raw? Especially if you have arthritis.
I'm chomping at the bit to get a garden going, but I have to curb those ambitions if I am going to do any traveling. Still, we brought home some salvaged lumber to make planter boxes. It doesn't hurt to have some infrastructure. I also want to pick up a drip system. Our summers are extremely dry.
