I don't do food blogs (until now) but yawl know that Donna does low carb and I do seefood, so we came upon this eggplant recipe that suits us both. I think it's as good as "real" pizza and it doesn't use dough, so she's happy. No need to use meat either, unless you want too. I think I'll put some mushrooms on there next time. Hopefully eggplant won't get too expensive during the winter, because this will be a regular thing.

Slice the eggplant about 3/4 to an inch and salt as usual for eggplant (see youtube if you don't know about this). Then spread some EVOO (extra virgin olive oil) on a cookie sheet and place the dried off eggplant on it. I just took a napkin and put a touch of oil on the slices. Not too much or it will soak in. Bake that for 25 minutes at 400, then put the toppings on and put it under the broiler for 3 minutes. It was great!

okay, coming back at ya ... you didn't mention what toppings and I looked up recipes and made a couple of styles, but would still like to know what toppings you are using.

Get Fredo's recipe for pesto. It is easy to do and freeze in muffin cups. I always raise a little basil for it.

The guy who get me started planting garlic made pesto with his garlic scapes, but I didn't get into that for some reason. Not that I don't like to try new things....

I have always been afraid to try eggplant. this recipe does look quite yummy and healthy!

have just planted eggplant seedlings out , have them covered with large plastic bottles, bit cold still but will save this recipe

Almost no recipe required!

Just cook'em in some way then put the toppings on and under the broiler!

I tried gluten-free pizza crust, and it was depressing to think I'd probably never be eating pizza again. This recipe is the perfect solution to my dilemma. Thanks so much.

I like eggplant--in fact had an excellent eggplant parmigiana at Cafe Vico last week.

My maw made eggplant parm on cookie sheets and I can't remember how she did it. I do remember that it was a favorite tho.

We love eggplant.There are so many different recipes out there and most of them are good.
Egg plant parm and also extra slices of eggplant to enjoy in your salad.Sandwich etc.
Check google they have ton.As far as carb go,no problem for me.Eat and enjoy.Time is short.But that looks good and will check with Mike on this.Thanks.Nice to see you been some time now.

I look for recipes for squash and zucchini and new things to try and they almost always list ingredients that I don't have and don't want to buy. Something yesterday called for pesto, and other recipes call for other "odd" ingredients. This one was perfect since I didn't have to buy anything except the eggplant. Maybe next year I'll try growing them.

I love eggplant. I'd love to make this. I don't know what EVOO is. Help. Also please edit the phrase "I just too a napkin" since it doesn't make sense. Yes?
