Spaghetti Squash!

First time to try this little item. Our family has tried to "migrate" toward a vegan lifestyle (without all the accompanying religion). By "migrate", I mean we cheat. A lot. But at home, where choosing is the easiest, we do without meat, dairy and eggs as much as possible. The girls are excluded. They still get milk. We shop at a great little grocery called Sprouts and usually load up on direct from the farm produce.
It has been an education and certainly has shown us how much others struggle while trying to live their lives on a restricted diet like "gluten-free", diabetic sensitive and others of that ilk. So....here's to spaghettie squash.
I microwaved the halves after removing the seeds and slathering with (vegan) butter. Then the squash is scooped out and reheated in a pan with salt, pepper and (vegan) butter to taste. Jennifer thinks she remembers seeing a recipe in which spaghetti squash was used instead of real spaghetti.
In other news, we met with a midwife today to begin the process of an at home birth for our third child. Did I break that little piece of news on here yet? She is nice and sounds very competent and knowledgeable. This is a first for us and we're understandably nervous. I did my "Google background check" and she came back clean. LOL Seriously, she seems to be quite experienced and fully equipped. I'd be interested in your stories and thoughts on the subject.
Aha! A picture of the spaghetti squash.

Congratulations. I don't know much about the pros and cons of in-home birth, but you can probably change your mind any time if you get cold feet, right? You know the middle child syndrome? I've always wondered if it helps to have four children so there isn't a middle. Do you think if there are five, the middle of that group feels middle-y? I'll ask my cousin who has five little kids what she thinks about it.

I think after five, no one feels special or left out. All I can imagine is total pandemonium. And yes, we have the option of bailing out if we get cold feet. And believe me, that option is still on the table.

A tomato sauce would be acceptable and I have done that. It tastes
like "real spaghetti". My sister and I were born at home and ate mostly
vegetables as children because we had no choice and we are healthier than
our children are. What has prompted this new way of living?

As to home births, at one point in recent history, all children were born at home.

I've been a semi-health food nut and exercise freak for a while now. Not sure what started it. I just know it feels good. Randy inspired me a lot in the early days of my MyBloggers experience. Recently, we watched a documentary called "Forks Over Knives" and some friends had to go vegan because of severe health issues. We accompanied them on their journey for a while. We're not holding to it rigidly by any means!

I use to make a spaghetti squash ans sauce with 'tomato' sauce (cooking a can of tomato sauce, adding spices, until boiled down and thick--back in the 60s when I was on Weight Watchers!!
IF I was a woman (no way could I handle all you go through including birth!) it would be in a hospital!

I'm sure if I were a woman, my genes would end with me. I don't even want to go there. LOL

Your spaghetti squash looks delicious. It just needs some tomato sauce, onion, ground beef and grated Parmesan.
I wasn't going to say anything but since you've asked for opinions... I would never jeopardize the health and safety of my child (or myself) by giving birth anywhere but in a hospital full of medical personnel and life saving equipment, just in case anything goes wrong.

That resonates with me. It truly does. Fortunately, we are 1 mile from the nearest hospital. It's certainly not like being right there, but it is close. I'm not so sure I'd go along with it if we lived in a rural place.
