Summer Squash Casserole

Three cups cooked squash legg well beaten i/2 cup sharp grated cheddar cheese 1/2 cup cottage cheese 2 tablespoon diced onion 2 TABLESPOONS butter salt and pepper to taste and try to have bacon left from breakfast to crumble over the top. I use a little more cheese than this recipe calls for and it serves as a main dish with a salad. We love it and hope you do too.

I think it has to be pre cooked to absorb all the flavors.

Sounds good! Tell me more about the squash bug life cycle. I didn't know there was hope for more squash after those things got started. They were not put off by Sevin dust at all and I didn't like using that on our food anyway. Been a while since I've done a garden around here.

We have the best tomatoes this year. 4 plants and we have all we can eat but are too stingy to share. I am planting squash tomorrow. According to my friend who is a master garden, it is better to wait on squash until the bugs are all dead. I have two little raised beds that I got at Aldis I fertilized this year and got better tasting food.

You will have to put up with squash legs because I don't wear glasses early in the morning.

I had to read it twice to figure out what a squash legg is. One egg beaten. This looks very easy which is the way I like it. I have tons of flowers but no squash yet. It has been windy enough to polinate, but nope. Thanks for posting. This is the easiest way to find it when I need it.

Apparently, in Oklahoma, th e life cycle of the squash bug ends on the 2lst of July so I will be planting again to have a fall crop. I have four tomato plants that I fertilized with miracle grow and they are the most delicious and bountiful ever.
