What a Stir-fry!

A few months ago I bought a bag of rice sticks. There were three bundles of noodles in the bag. I used one a while back and was unimpressed with the result. Today, I "googled" rice stick recipes. That frustrated me as I do not have all of the ingredients for the recipes i found on hand. I decided to be creative. It is a stir fry after all- what can go wrong? I used fresh scallions, carrots, celery and garlic. Instead of chicken, I used pork. Instead of a mixture of soy sauce and cornstarch I used some 'Lee Kum Kee' (brand name) vegetarian stir fry sauce.
Oh my gosh! It was delicious! It tasted so good that I took a photograph of the partially-eaten stuff on my plate. My wok is a mess (the very sticky noodles stuck to the wok) but my palate is delighted! I have enough left over to have it tomorrow too. Tomorrow I won't need to cook at all because I still have some stew left over from two days ago, just enough for lunch.



My youngest sister is coming next week and I am trying to clean the house. She has a two and a four-year old and I am trying to get as much as possible out of their reach. Impossible! I have to settle for moving things that are either dangerous for them or dear to me. They want to go out for Thanksgiving as they are meeting other friends. What? No home-cooked turkey?! What about my left-overs? They may not be here Friday or Saturday after Thanksgiving either as they are visiting other relatives in Bradenton. I decided that I would cook my turkey on Sunday instead. They won't be here, but the left-overs will be when they arrive on Wednesday.

I love stir-fry dishes!! There are so many options, from main ingredients to the flavoring. As for "child proofing" your house, for me, that's not an option. The magic word is (you guessed it), NO! First, you tell him he's not to touch anything. Then, if he does, you beat the crap out of him (okay, slap his hand). I've never, ever, had to put things up or away. Kids know.
By the way, I love leftover turkey!!

My sister parents a bit differently. I would not have to go through all of this if it were my grandsons visiting because my son does not allow his sons to climb on furniture or open cupboard doors either. I don't know why my sister lets her kids get away with it. I thought my son was permissive until I mentally compared his parenting style with my sister's. What a difference!
