Go girl! I like group exercise, it's too easy to give up when you try to do it alone at home. And having lots of little goals also helps - like 2lbs/week or run/walk a 5k race, etc.
Yup, those expiry dates for dried foods is just to get you to spend more. Canned food doesn't go bad. I've never had spices go bad either. Freezer burn isn't even that bad, just eat it with a flavourful sauce, and you won't notice. I keep nuts, flax and and whole wheat flour in the freezer so it doesn't go rancid.
Glad the arrow keys worked! The last time my mom babysat, I paid her in homemade quiche, and a dozen free range eggs bought from the next door neighbour. She had no complaints (and asked for more eggs!)
The nachos up here is chilly Canada is like your version, often with added diced tomatoes, green onion and olives, served with salsa and sour cream. Yum! I tried baking chips from corn tortillas - didn't like them. Very gritty, not at all like the store bought type.
An advantage to living in Canada (despite the long wait lists), it's free. Insurance is for dental & drugs.

I do the same thing - eat at night. I've heard that you should make your largest meal earlier in the day, but I find that I can't eat much for breakfast or I feel sick, and eating a larger lunch doesn't stop me from having a larger supper... Tonight, I've eaten a handful of dark chocolate covered almonds with my red wine. At least it's mostly healthy.
I can't seem to stop burning food lately and keep setting mine off.

With all the snow here, I can get some exercise in by cross country skiing! I go in the ditches, or into unfenced fields. It's supposed to be as good an exercise as running, but I don't find that it gets my heart rate up as high. I've been running outside on the warmer days too, but I've seen people running in the colder and snowier weather - I'm just not brave enough to try it yet!
