Cheese Grits and the Menu

I had a friend Sally who has since crossed the big divide with whom I had a lot in common, including our geeky husbands. She spoiled hers with The Menu, and mine would have loved to live that way, but I never gave in.

She got to cook what she wanted on weekends and he would eat it, but on weeknights the menu was pre-set:

Monday:
Hot dog
Chocolate milkshake

Tuesday:
Cheese grits poured out of a pitcher
Biscuits

Wednesday:
Grilled cheese sandwich made with pepper jack cheese
Chocolate milkshake

Thursday:
Spaghetti-Os

Friday
Fish sticks

That's it, no vegetables, no salads, no garnishes.

He was a scrawny guy, and she was a jolly fat gal, cooked the menu, but ate other things.

I was at a conference with her and one of the speakers was a lady from OSHA, one of those people we'd hear a lot about, and then finally there she was in the flesh. She had a sexy-sounding name, and didn't look anything like it. Sally told me this Jennifer complained to her that people would come up and start talking to her, thinking she was Sally. Sally responded: "Oh, Jennifer, don't you know? All fat girls look alike."

Here's a recipe she gave me:

Lemonade Pie

1 shortbread cookie crumb or graham cracker pie crust
1/2 cup Country Time lemonade mix
1/2 cup water
2 cups vanilla ice cream, softened
1 tub (8 ounce) Cool Whip topping, thawed

Stir drink mix and water until dissolved. Beat the lemonade mixture and ice cream in a large bowl until blended. Gently fold in whipped topping just until smooth. Freeze until the mixture mounds, if necessary, and spoon into the crust. Freeze 4 hours or overnight until firm. Let stand at room temperature 15 minutes before serving or until the pie can be cut easily. Garnish with lemon slices. Store leftovers in the freezer.

There are commercial desserts that are okay, and if I am going to have some, it will be at dinner out where two couples share one chocolate-by-death, and that is once a year if that. Calories are hard enough to manage without working in the kitchen to make them happen. Dessert last night was a chocolate chip cookie and I am already regretting it. Mostly, a Weight Watchers chocolate ice cream snack bar,45 calories (no artificial sweeteners -- I don't know how they manage that). No, it isn't enough, but in 30 seconds or so, I'm moving on without a craving. When I have super desserts in the house, it's harder, so I don't buy them.

I hate the menu but it would be so easy to prepare. I have eaten the
lemon pie and it is really good.

I feel sorry for my husband because he'd probably like to know that because it's Wednesday we're having meatballs; baked salmon on Fridays; grilled cheese on Tuesday. I've never told him, but would like to: "Think again, Bubbles, life's unpredictable." After all these years, he's probably figured that out.

Yeah, I got hung up at Spaghetti-O's and really fell off the wagon with fish sticks. What an odd fellow.

A couple of summers ago I vowed we wouldn't eat any hot dogs unless it was those odd ones that are supposed to be better for us, and we tried those once. And then, as you put it, we fell off the wagon - not to say we have hot dogs all the time.

It was the husband's choice. He let her serve him nice meals on weekends.

I love lemon meringue pie, but l Country Time? I don't think so. Kind of like using Tang in a recipe that calls for orange.

Spaghetti-os. Egad. Even my undemanding palate can't take those. But as long as he was happy about it.

A few years ago I gave Spaghetti-Os a try to see if I had forgotten their redeeming qualities. Nope. Still lousy. Is it possible that 40 or 50 years ago they were better? Possible. For all we know, what we're seeing today is made in China.
