My Easter Hike

... was absolutely wonderful!

First off I spent most of my weekend with TBD. Because of his allergies to cats, we always hang out at his place and I've been cooking for him instead of the other way round. Saturday I made Salmon Cakes from Healthy Appetite and he loved them. It's a challenge to cook for TBD as he's a pescetarian - a fish eating vegetarian - but he also doesn't eat mushrooms and insists on organic everything. Ack! I love mushrooms! But so far I have successfully cooked meals he likes and am thinking the next dish will be Vodka Pasta from 30 Minute Meals as I hear it's a fantastic pasta dish.

Sunday we met up with CK and two others for the traditional Easter Brunch & Hike. The Brunch was just as I remembered and I dined on omelets and mini waffles as well as chocolate covered strawberries. YUM! This was CK and my fourth year and we're the only ones holding strong to the tradition and I hope we can continue it for many years to come.

After we were full from the buffet extravaganza, the five of us hopped into my Caddy and headed to the Santa Monica Mountains and parked under Calabasas Peak. We hiked up to the fork in the road and after resting up from the steep two mile incline we decided to take the Red Rock trail this year to see the "caves" and "fossils." We did not find a single fossil but we did find the caves and had fun posing in them and climbing up the large boulders in the area.

CK and I ran ahead on the trail to see if it was worth going ahead. We jogged around a few curves in the trail and decided it was better to head back. We turned around and decided to jog again until we saw our hiking companions and our competitive sides came out and we sprinted back. I was surprised that I could sprint so well as I rarely - I mean hardly ever - run. CK realized that it was going to be close and gave it her all to beat me by a leg.

It was a blast racing her and I think we'll be doing that again sometime soon. CK said she hadn't raced anyone in some time and gave me props for getting back into shape and for giving her a true run for her money. I would not have been able to do that a year ago.

I forgot how much fun I have when I hang out with CK as I don't get to see her very often anymore.

Our hike turned out to be just under 5 miles and once back in the car we drove up the road to look out over the ocean and spotted Catalina Island. Then it was time to head home. I dropped everyone off, including TBD with a kiss, and headed to my own home where my two kitty cats were anxiously waiting for me.

It was a fantastic weekend.

Hey I checked that vodka pasta recipe. YUM!
I noticed that it has chicken broth though - does he eat that being a pescetarian? If so veggie broth is YUMMY and will substitute just the same...

That is sooo cool! I am glad you had a great time... sounds perfect really!!!
Kudos for being able to race!!! That is something I am not ready to try yet...
