Deep Breath!

Since Christmas Day, I've cooked up a storm!

Crockpot Crab Spread, easy/elegant appetizer w/5 ingredients:
-3/4 c mayo
-8 oz Philadelphia Neufchatel, softened
-1 onion minced fine
-1 green onion shoot chopped fine diagonally
-1 can of Chicken of the Sea pasteurized crabmeat
Blend everything well by hand; add to crockpot on LOW, & stir occasionally. Dip will hold up to 2 hrs (8 servings). Delish with Carr's cracked pepper crackers!

Salt & Pepper Cheese Puffs
1/2 c (1/4lb) butter, chunked
1-1/2 c all-purpose flour
6 lg eggs, beaten to blend
1-1/4 c shredded sharp cheddar
1-1/2 tsp fresh-ground pepper
coarse sea salt
In a 3-4 qt pan, bring 1-1/2 c h20 to boil on high heat, adding the butter to a full rolling boil. Remove from heat, add flour all at once, stirring until mix is a smooth, thick paste w/o lumps. Add a quarter of the beaten eggs at a time, stirring vigorously after each addition til dough is no longer slippery. Stir in cheese & pepper. Spoon dough (tbsp size) on 2 buttered cookie sheets. Sprinkle w/a few grains of coarse sea salt. Bake @ 400 degrees for 30 minutes until brown. Serve warm.

Crispy Won Tons w/Dipping Sauce
-8 oz Philadelphia Chive+Onion Cream Cheese
-1/2 lb ground pork, cooked, well drained
-1 tsp minced ginger
-1 tsp sesame oil
-32 won ton wrappers
-sesame seeds
-2 tbsp soy sauce
-1 tbsp rice wine
-1 tbsp water
Preheat oven to 425 degrees. Mix cream cheese, meat, ginger, and sesame oil. Place 1 tbsp of the meat mix in center of each won ton wrapper. Bring corners together, twisting to enclose. Flatten bottoms. Place in a 15x10x1" baking pan. Brush lightly w/water; sprinkle w/sesame seed. Bake 10-12 minutes or until golden; remove from pan, drain on paper towels. Mix remaining ingredients and serve w/won tons.
