I've made my lunch, and I didn't have breakfast. I don't think I'll get in all of my 36 designated points today. I did make some beautiful stuffed peppers for 8 points each.

The recipe includes:
2 green peppers (1 point)
1 cup of instant brown rice (3 points)
1 cup of low sodium beef broth (1 point)
2 cups of 80% lean ground beef drained (8 points)
1 can low sodium tomato sauce (3 points)
I divided everything evenly between the two peppers, then I sprinkled just a few Italian flavored bread crumbs on top. This is a filling and delicious meal!
