Today I had a hankering for one of our favorite recipes, a vegetable mash. It's basically mashed potatoes with cabbage, onions, garlic, turnips, and cauliflower mixed in. We boil them, drain them, then whip in butter and cream.
In this new diet, butter and cream are now out! So... I decided to try this recipe using almond milk and a little nutritional yeast. This is my first time trying nutritional yeast. It's supposed to give food a kind of cheesy flavor. Doesn't sound very appetizing to me but I'm willing to try it anyway.
We've just finished eating it. Not bad! Hubby went back for seconds. The only thing I'd do differently is that I wish I'd bought plain almond milk without the vanilla. Since we usually use it on our oatmeal or rice, that's all we had. The vanilla gave it a slight 'ice cream' taste, but other than that it was quite good! The flavor of the vegetables really stood out and they complimented each other nicely!
So, there you have it. We're learning as we go. My daughter actually likes my vegan cooking better than my old dishes. Perhaps I'm trying harder than I have for a long time. Some things have been a great success! Some, not so much.
I must say, I make a mean lima bean soup. We love our lentils too. Hubby has mastered the art of tostada making (un-fried corn tortillas only!) However, my last vegetable soup wasn't so great. I'm not sure if it was the purple carrots or the swiss chard that turned everything a disgusting shade of gray. It was still edible, and even tasted good, but not very appetizing to look at.
I bought some leafy green starts to plant in a vertical garden that I'm making. There is no better lettuce than the kind you've picked only moments ago! And this garden will be slug proof cuz we'll be growing it indoors.
