Stuffed Meatloaf

(No list of ingredients)

1. Mix in a large bowl:
-Ground Beef (3 parts)
-Mild Sausage (1 part)
-1 pkg Onion-Mushroom dry soup mix
-1 teaspoon Worcester sauce
-1/2 tsp Chopped fresh basil
-1 egg
-Cracked pepper to taste
-1/2 cup Italian bread crumbs

2. Knead the above together and flatten on a working surface about 3/4 to 1 inch thick, so that it is as wide as your meatloaf baking dish but 3 to four times the dish in length, top-to-bottom.

3. Place slices of your favorite or preferred cheese on the flattened meatloaf. Cover the entire slab of meat, but leave a little meat showing at the edges. Now cover the cheese with fresh spinach leaves.

4. Carefully roll up the meat and cheese and spinachlike you are rolling up a rug.

5. Pinch the meat at the edges to contain the cheese inside the rolled up meatloaf.

6. Place in a lightly greased meatloaf baking dish. Bake at 325-350 uncovered until desired.

Remove. Cool for ten minutes. Slice and serve.

NOTE: When I bake meatloaf I take it out of the oven after about 45 minutes and pour off some of the melted hot fats. This will give you a better and crispier surface along the sides.

I have heard about the don't eat anything white diet.
comment by elderjane on Aug 3, 2010 6:25 AM ()
I first did it in 1979 and lost 14 lbs over a months and a week. You do it for two weeks, then go on maintenance diet for a week, then do another two weeks of it. In those days it was called the TWA Stewardess Diet.

If you wish you can top it with a little BBQ sauce, ketchup, whatever. Not much.

I guess you won't be writing a diet cookbook.

My diet book is one paragraph long:

Eat in moderation. When you can say "I think I'm GETTING full, stop eating." If you are gaining weight, don't eat ANYTHING WHITE, eggs, nuts, dairy or meat for two weeks and drink six glasses of clear juice a day. End of book.

Great suggestion about pouring off the melted fats. I'll try that next time.

To keep from clogging drains, I save and wash a cat food can or two just to hold the grease when I do that.

If you don't like spinach, use chopped green peppers and radicchio.
