This isn't really stew. But it is dark. It is Black. Something you just need to call "Devil's Stew. "But, it isn't actually stew. You can serve it on a plate.
Not everyone will enjoy this.
Take a pound of chopped sirloin or ground sirloin or round and brown it in olive oil in a large skillet. Chop up w3hatever green, orange, red or yellow peppers you can find. Add to the fried meat. Chop up a couple green onions and add them. Then douse with black pepper,... open a can of BLACK refried beans and add to the mix. Stir well, cover on low for about ten minutes, then scrape the skillet because the beans will tend to stick. Do that about every five minutes. Cook with a screen cover (not a lid) so the liquid that comes out of the peppers evaporates. Serve with sharp cheddar cheese (grated or shredded.)
I call this one of my "bad bachelor's quickie meals."
As I said, not everyone will like it. I have also slapped some sour cream and guacamole next to it on the plate. You could add tomatoes, too.
