Snow, School, and Cauliflower Pizza

I slept in a little later this morning and didn’t get my workout in, but since it was snowing ALL day long, I decided I’d save it for tomorrow. It’s a shame that I get so excited about staying in all weekend. It has been such a busy semester it feels like, and especially the last few weeks with Christmas vacation approaching, finals, and just trying to get in as much as I can before school starts back up in January. Not to mention, we babysat my niece and nephew this weekend and they kept me pretty busy.

So yeah, I’m looking forward to my week of peace! In two weeks, finals begin, then Christmas vacation. Life is going to be PRETTY DARN BUSY! I’m so ready though! I feel like a little kid, itching to start! I’ve already ordered my books and everything for next semester! :] It’s funny how at the beginning of a semester I’m always so excited, but at the end I’m ready to pull my hair out and saying how “I can’t wait to be done with school forever!” Then, we have a break and I’m ready for the next semester! It’s an endless process! Anyway..enough about that..

My mom and I made Cauliflower Pizza tonight. We’ve been wanting to try it for a while now, and we finally gave it a try! It was really good, I’ll probably still want regular pizza, but you gotta love those healthy alternatives!

The recipe for Low-Carb Cauliflower Crust Pizza:

Ingredients

Nonstick spray
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 large egg, lightly beaten
1 1/4 cups shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese
Kosher salt and freshly ground black pepper
1/4 cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced
1/4 teaspoon crushed red pepper flakes
Fresh basil leaves, optional

*And any additional toppings you desire

Um, NO! The eggplant doesn't go on the pizza, it is the pizza "crust". The toppings go on the sliced eggplant. Leave the skin on, slice in like 3/4 slices, salt and weight in a strainer to get some of the liquid out. Rub each slice with olive oil on a napkin to remove some of the salt and put in the oven for 25 minute. Then put the toppings on and broil for 3 minutes.

We made this pizza since my ole lady does low carb but I like it too--as much as the real thing. There's also one using sliced eggplant that I go for. I fry up my own topping with meat and sauce and union and garlic etc.

That sounds really good and I love eggplant - should try that! I like to give more healthy toppings a try once in a while, like spinach and mushrooms. I've never tried eggplant on pizza before but it sounds great, so thanks for the tip.

It sounds good. How could anything be bad if it has cheese and Pepperoni?

I know it was really good...I suppose the pepperoni wasn't the healthiest, but it sure tasted great! And yes, cheese is never a bad thing.
