Let's Talk Turkey!

By now, for those of you who celebrate Thanksgiving, you probably
never want to see another piece of turkey this week but that's not the
case with me. Last week I received a gift package consisting of a 15
pound turkey, celery, onions, potatoes, a box of stuffing and a can
each of gravy, jellied cranberry sauce and yams--cut sweet potatoes in
syrup which is high in beta carotene and vitamin A--healthy, right? I
spent yesterday cooking everything up and adding a few variations!

I did a few variations such as adding marshmallows
to the can of yams, mixing Trail Mix in with the stuffing (or dressing
as we refer to it in the south) and you may have noticed that I also
stuffed an Idaho potato into the turkey. As I baste the turkey with
pineapple and orange juice I used the can of gravy but cut it down as
it tasted very salty.

I must admit I
love to make and eat the turkey soup. It is a combination of water,
celery, rice,  turkey bones, meat and skin, spices, canned tomatoes,
corn and whatever else I have around the house. It certainly came in
handy as we had a 'cold' wave, going all the way down to the 50s, so Ihad some soup to warm up!!  :O)

Okay folks, guess what I will be eating all week?!?!?  RIGHT!!!!
