Cranberry Pumpkin Bread

I make this every time at this year when the Cranberry are out.
Here is a mouth watering recipe think that you may liked it.


2 cups all purpose flour
5 teaspoon pumpkin pie spice
2 teaspoon baking soda
1 1/2 teaspoon salt
3 cups granulated sugar
15-ounce can pure pumpkin
4 eggs
1 cup vegetable oil
1/2 cup orange juice
1 cup fresh or frozen cranberries.

preheat oven to 350 degrees.Grease and flour two 9 by 5 in loaf pans.
Combine flour,pumpkin pie spice,baking soda and salt in a large bowl.
Combine sugar,pumpkin,eggs,vegetable oil and orange juice in a mixer bowl
Beat until blended.
Add the pumpkin mixture to flour mixture,stir until moistened.
Fold in the cranberries.
Spoon batter into prepared loaf pans.
Bake for 60 or 65 min.or until wooden pick in the middle or center comes out clean.
Cool on a wire rack for about 10 min.or so...remove to wire racks to cool completely.
Fredo note.As for me I cut the sugar way back to about a cup and a half.
I used egg beaters instead of eggs.
By cutting out the sugar taste just as good.
Hope that you give it a try.
A nice dessert with your favorites ice cream etc.
I will be serving this tonight for our company.
The second loaf goes to my guest if they want it.
Left over spice well you know what to do with it.
Put it in your coffee while brewing.Taste yummy.
Much cheaper than Starbuck.
Oh!did you hear they have a shortage there,poor thin.LOL

Thanks, Fredo! Sounds delicious. Can I use real pumpkin? How about dried cranberries? I'm guessing I can. I'm also thinking about using a sugar substitute for many of my desserts.

I do not recommend sub on sugar.They have hidden claus in there and plenty of chemical to go along with this.Just cut back or do not used any.I do not miss sugar and have no need for it.
All the natural are there in the fruit and vegetables.

When I used sugar sub in my coffee a couple of years ago I developed major digestive problems and was hungry all the time. Needed medical attention. When I switched back to sugar, my symptoms disappeared. Ed drinks tons of diet coke. He eats throughout the day and always complains of being hungry but will not take my advice. Now I guess you would be okay if you don't overdo -- but in my case, I was only having one teaspoom a day in coffee and the effect was horrid. Better to eat a little sugar, than to deal with those chemicals.

just watch out for the sugar subs.Read the ingredients as they have more hidden claus.
Splenda is the worst.Too sweet and not sure if you liked it.I use organic raw sugar.
But if your making the bread.Keep in mind this is in two loaf.
Your not getting all the sugar in one.Or skip it?you may liked it without.
I used dried cranberries never frozen.The berries are out now and fresh.

I can't believe you actually used 3 cups of sugar in this bread. Now I see
that you cut the sugar in half.

No cut the sugar way down.Remember this is in two loaves.Equally sugar in both.
Your not get all the sugar in one.Just split.But you do not need 3.
