Corn Fritters and Easy Apple Cake

Batter:
l/3 cup cornmeal
1/3 cup flour
l tsp paprika Optional
1/2 tsp baking powder
l large egg
l/3 cup buttermilk set aside
Saute:
3 tablespoons chopped onion and 2 cans drained canned corn in butter for
3 minutes
Fold into batter and fry in hot canola oil.

This is the easiest cake I ever made and is good too.
Empty l spice cake mix in a bowl, add 1 can apple pie
filling and three eggs. Beat until blended and bake at
350 degrees. Ice with cream cheese icing. For convenience
I buy the icing. It takes 3 minutes tops and is great to
have the ingredients on hand for unexpected company. I add a few tablespoons of sugar and cinnamon to the apples.
And you could add walnuts, I will next time that I make it.
