Sausage Gravy

This is supposed to be like the sausage gravy served at the Cracker Barrel restaurants. At least they are making it from scratch; most restaurants use a dead-white dry mix. Now, don't get in a tizz about fat and cholesterol, gravy is fattening by definition.

It's interesting that this recipe has both sausage and bacon crumbled into it. I keep a bag of Hormel cooked bacon crumbles in my freezer so I always have it on hand for seasoning. You could also get pre-cooked and frozen Jimmy Dean sausage to keep in the freezer so anytime the urge for sausage biscuits hits you, you're pretty much ready to go.

Sawmill Gravy
1/4 cup fried meat grease
1/4 cup flour
1 sausage patty, cooked and crumbled
1/4 cup bacon bits
2 cups milk
Salt
Coarsely ground pepper

After frying bacon, ham or chicken, pour off fat and measure 1/4 cup drippings. Place back in pan and add flour. Stir until blended, cooking for a bit. Add milk and cook over medium heat, stirring constantly until bubbling and thick. Season to taste with salt and coarse ground pepper. Add crumbled sausage and bacon bits. Stir well and serve.

Serve with hot biscuits.

We pour it over our biscuits. Incidentally, Jimmy Dean sausage is good
and has very little fat. I prefer it to any other brand.
