We went to the Grinch Christmas show at Universal Studios in Orlando, and they had a guy signing for us. It didn't seem like there were enough hand-motions to cover all the letters in "Christmas" - is that American Sign Language? Do people figure out the context and so they don't need it spelled out?

Sounds like ASL. They do NOT fingerspell everything. That would take forever. Yes many signs can be very quick. Christmas is the C hand shape and it moves across your body while your elbow rests on your other hand(see this link https://lifeprint.com/asl101/pages-signs/c/christmas.htm )
