Insalata Perfetta

Tried a new salad....and it was good. Give this one a try if you can.

Makes for 2-3 people.

Insalata Perfetta è facile da fare. È fatta con lattuga, pomodoro, sedano, cipolla, olio d’oliva, aceto, e sale.

4 cups torn fresh lettuce ( the freshest-looking in the market)
1 small red onion, thinly sliced
1 cup chopped celery
1 carrot, finely shredded
1-2 tomatoes, quartered and sliced
2 tablespoons dried Italian Herb mixture (oregano, rosemary, thyme, Marjoram) (i used a mix that had thyme, basil & marjoram)
1/4 cup organic extra-virgin olive oil
2 tablespoons apple cider vinegar
2 tablespoons balsamic vinegar
1-2 teaspoons sea salt
Fresh black pepper to taste

In a large salad bowl, combine lettuce, onion, celery, carrot, and tomatoes. Sprinkle with dried herbs, drizzle with olive oil & vinegars, and sprinkle with sea salt & fresh black pepper to taste. Toss until well coated. Allow to stand 5-10 minutes and serve immediately. Perfect every time.


I'm not a big celery or red onion fan but when it sits in the oil & vinegar for a bit it tones down the taste. ONOLICIOUS!

I've got all those ingredients, so will try it for lunch - I'm intrigued by the use of two different vinegars.

Hope you like. Got another recipe I'm going to post but it takes about 2 days to make so not sure if others will want to do that or not...but it was worth it! Hope you get to try this one & enjoy it!

First time doing these recipes so need measurements. As I become more confident & comfortable with raw food recipes...I'll have to follow them.
