I had 6 chicken thighs defrosted, so I started them in a little extra virgin olive oil, and I added:
1/2 large yellow onion sliced
1 green pepper sliced
1 medium sweet potato sliced thin
a sprinkling of salt, pepper, and cajun seasoning
At the end, I added a splash of red wine to deglaze the pan. It was such a good, low-point meal!
