I made a recipe recently I'd like to share. It was SO good:
1 box spiral whole wheat pasta - boiled in salted water
1 large can of spaghetti sauce (I used Traditional Hunts)
3 links of full fat, sweet Italian sausage, cut into bite-sized pieces
5 sweet peppers sliced (bell pepper would be delicious)
1/2 large yellow onion, diced and sauteed with Italian sausage
1 can diced tomatoes, slightly drained
1/2 C of mozzarella cheese
1/2 C of good red wine
LOTS of Italian seasoning
I assembled this in the following order in the pan:
- cooked pasta
- sauce with the wine added to it
- veggies and meat
- a little shredded mozzarella
- sprinkling of Italian seasoning

It made a HUGE amount of food, and I counted all the points for the whole thing. 64 points. I divided it into 8 equal 8 point servings, and this was the BEST frozen dinner ever. I ate it all week! Next time, I'll take a picture.
