Herman Friendship Cake

I have shied away from taking care of Herman for months now but I have finally taken him under my wing!! I dread to think how long he has been sitting bubbling away on various kitchen work tops but the end result does sound tasty!!

Apparently if he stops bubbling then he is ..........DEAD!!!!

I will keep you posted as to how things are going ... so far I have only had to put him in a bowl.... the result is he is still bubbling - that's hopeful.

Days 2 and 3 only involves stirring so that surely can't go wrong but day 4 he requires "feeding" - I'll let you know how that goes.

Herman is basically a chain letter in the form of a yeasty concoction. He takes 10 days from receiving him (the person giving him splits him in 4, keeps one to bake and gives away three.) to being able to eat him. Google "Herman friendship cake" there is tonnes of stuff from starting your own to different recipes to use with him.

A friend of mine nurtured one of those Hermans for several years, foisting hundreds of muffins and tea breads off on friends and strangers alike. I've done a sour dough starter myself a couple of times, using it for pancakes, sandwich bread, and coffee cakes more than sweet, fruity breads. I might get one going this summer, I'm still trying to achieve an artisan-type loaf with big air holes in it.

try adding some baking soda to the mis or over knead it that should create some air in the mixture
