Sour Cream Blueberry Cake



Just out of the oven and my first time in making this.
Here is the recipe that I use

Sour Cream Blueberry Cake
1 stick of unsalted butter,softened
1/2 cup of sugar
2 eggs at room temperature
1 teaspoon of vanilla
1 1/4 cup flour
1 teaspoon of baking powder
1/2 tsp of baking soda
dash of salt
1/2 cup of sour cream(room temperature)
1 cup of fresh or frozen blueberries.
Preheat the oven at 350 degrees.Butter and flour a nine inch round cake pan.
In the bowl of a electric mixer(or with a wooden spoon)beat the softened but and sugar until light and fluffy.
Add one egg at a time and beat well after each addition.
Beat in the vanilla
Sift in the dry ingredients.Add half of them to the butter mixture beating until combined.Add the remaining flour and mixed till combined
Spread the batter evenly in then pan.
Scatter the blueberries over the top.
Baked for thirty minutes,turning once so the cake will brown evenly.
It is done when it is slightly browned around the edge.
Toothpick insert in the middle to see if is comes out clean.
Cool for ten or longer minutes.
then turning out of the pan.
Served warm at room temperature.
About eight servings.

Note:
I use Greek yogurt instead of sour cream.Fat free
This is use for baking,cooking,etc.
Also can used this as a topping if you like.
If anyone makes this,please give me a feed back on this.

I always use yogurt (usually vanilla) as a substitute, even for a topping (like on my rhubarb pie). Again, thanks.

we just had this tonight.It was good light and not sweet.We had it with ice cream.
Next time I am going to put a title yogurt on top.This will be good for your girls at your antigue meeting with coffee.I think that you will like it.Also cream cheese topping may be good for this like the flavor kind.Try it you will liked it.I send Ted an email and thought that he will be interest in it.

we had this tonight and liked it with ice cream.I think that this is good for coffee with the girls?
Very light and not filling.If you are going to do with sour cream this I liked to hear about it.

P.S. Can one make it without using an electric mixer? I can't find mine.Please don't make me go into the crawl space.

I did not use an electric mixer.Just beat it with a wooden spoon.I very seldom use mine.
No you need not to look for it.

This is the first time that I use the Greek yogurt and loved it.This is Okinos not sure of the spelling there and can tell the difference in taste.I loved or we do.
