Backyard Dining

Dandelions can be used for wine, and some other tasty dishes.

There are lots of versions of salads using dandelions, and I even saw a recipe for a kind of jelly.  But the one below really looks good to me. I have been pulling dandelions from my yard and after pulling them from 1/3 of the backyard, I have 2.5  large trash bags full. Then there's the front and side yards...

DANDE LITTLE PESTO BITES




  • 1/2 cup fresh dandelion greens, chopped

  • 1 jar of pesto

  • 1 red pepper

  • Chopped red onions

  • Chopped portabella mushrooms

  • Olive oil

  • Breitenbach Sangio Rosso Wine

  • Can of artichoke hearts, chopped

  • French bread cut into 1/2-inch thick slices

  • Feta cheese


Blend dandelion greens with pesto until smooth.
Roast red pepper in oven, peel and cut into pieces.
Sauté onions and mushrooms in olive oil.
Marinate artichoke hearts in wine for 1 hour.
Spread dandelion pesto on bread slices. Then layer veggies and top with feta cheese. Bake bites on a baking sheet in 400 preheated oven for 10 minutes until bred is crispy. Serve warm.ï¿°

Here is a link to some other recipes if your dandelions (like mine) are more prolific than zucchini and you can't give enough away!
