Vegetable Bakes

Let me tell ya, I'm hungry right now, but rather than cooking up a bunch of calories I'm dreaming by looking for recipes I'd love to jump up and make right now. At least these are vegetable-related.

This sounds kind of like Yorkshire pudding.
Onion Puff
2 large onions
2 teaspoons butter (or olive oil)
Batter:
2 large eggs
2 tablespoons melted butter
3/4 cup milk
3/4 cup flour
3/4 teaspoon salt

Heat oven to 375 degrees. Slice the onions 1/4 inch thick and saute in the butter in a 9 inch cast iron skillet over high heat until lightly browned and tender. Pour the batter over the sauteed onions in the skillet. Bake for 45 minutes. Best when served immediately.

Potato Dish
6 potatoes, unpeeled and diced
1 cup water
1/2 cup melted butter or margarine
1 package dry onion soup mix

Mix water, butter, and soup mix together. Layer the potatoes in a greased 9 by 13 inch pan and pour the mixture over them. Bake at 350 minutes for 45 to 60 minutes, until tender.

I've got a bunch of shredded cheese I need to use up, so I'm going to make this tomorrow. I don't have those French fried onions so am going to make some home version of it. Nor do I have the jar of pimiento, but I did buy some sweet red peppers at the store today.

Baked Vegetable Medley
1 bag mixed broccoli, cauliflower, and carrot
1 can cream of mushroom soup
1/2 cup shredded cheddar cheese
1/3 cup sour cream or yogurt
1/4 teaspoon pepper
(1 4 oz jar pimiento)
1 can French fried onions
1/2 cup shredded cheddar cheese

Combine the vegetables, soup, 1/2 cup of cheese, sour cream, pepper, pimiento, and 1/2 can of the French fried onions. Pour into a 1 quart casserole and bake, covered at 350 for 30 minutes. Top with the remaining cheese and onions and bake uncovered for 6 minutes longer.

Microwave: Cook, covered for 8 minutes, turning halfway through. Top with remaining cheese and onions. Cook uncovered for 1 minute or until cheese melts.

If I'm going to dream about food it will be about carrot cake, salami, chocolate, double cut of prime ribs with Yorkshire pudding, etc.

I might try the vegetable medley, I think, but would omit the French fried onions and the 2nd batch of cheddar. Or are you thinking if I do that, why bother? I always have pimentos on hand. Ed loves them and eats them as a snack.

No, I think it'd be worth a try without those onions and all that cheese. I would probably pre-cook the vegetables and start out with only half a can of the soup. Campbells has that cheddar cheese soup that I never buy, but it might be good instead of the mushroom.

I feel like I've never had it done right. People in England don't make it at home any more, they buy it frozen, and restaurants serve the frozen kind (heated up, of course).

Not picking on you but WOW! those are far from healthy recipes--
all have fat,a lot of sodium and the calories are high!
Lately I have been buying packages of Dole vegetables--they have about 5 different kinds--nuke for 5 minutes and you can eat the whole bag for a low calories snack.

I never claimed they are healthy. That's why I said I'm just dreaming about making them. Don't worry, I'm fully aware of the nutritional content of foods!
