I got a whole fryer, and I lifted the skin. Under the skin, I placed fresh garlic, olive oil, salt, pepper, and lemon slices. I then put more of the same on top of the chicken and all around. I also quartered an onion, threw in a few halved roma tomatoes, and also left two whole garlic cloves into the pan. I covered the veggies generously with some olive oil and salt. Everything went into the oven for one hour and twenty minutes at 400 degrees. This is what came out. I can't tell you how easy it was and how incredible it smells!
