Chicken breasts (2), skillet prepared in butter, long grain and wild rice, asparagus (steamed but not limp,) then broiled in the oven with garlic and olive oil on top. Sprinkled the dish with Parmesano. Easy to make. Even easier to eat.

One of my favorites .We have this several days a week.Asparagus that is.

Don't chicken breasts take at least 1/2 hour to broil -- do they crisp up even when covered with asparagus? Doesn't the asp. overcook in a half hour? You do the rice separately I guess. What do I know.

NO! You don't cook it all together!
1. Do the chicken breasts in butter in a skillet. While doing them...
2. I used Uncle Ben's rice with wild rice... follow instructions on the boc and do it on the range in a saucepan.
3. Steam or boil asparagus in another saucepan. Low boil for about ten minutes.
4. Remove asparagus. Dry on paper towel. Arrange on a foil piece on a cookie sheet. Spritz with oilive oil and dry garlic from spice rack. Broil in oven until asparagus begins to brown. Remove.
5. Put bed of rice on plate. Put chicken on rice. Put asparagus on top and sprinkle Parmesan on it.
