Peanut Butter Oatmeal Ice Box Cookies

This recipe doesn't call for eggs. It is very similar to the outside of the Girl Scouts' Peanut Butter Sandwich cookies aka Do-Si-Dos, but better of course because it's homemade.

Makes about 2 dozen.
1/4 cup peanut butter (chunky)
1/2 cup butter or margarine
1 cup flour
1/2 cup sugar
1/2 teaspoon salt
1/2 cup oatmeal (Quick variety or run through the food processor to make smaller flakes)

Cream the peanut butter and butter together. Add the remaining ingredients. Form into rolls and wrap in waxed paper or plastic wrap. Refrigerate at least 2 hours or freeze. When ready to bake, place 1/4 inch slices on ungreased cookie sheets and bake at 375 degrees 8 to 10 minutes, until light brown.

The dough was crumbly so I used the cylinder from my spritz cookie press to form it into the rolls, packing it in there and pushing it out the other end.
