Today I went to a seriously-vegetarian restaurant, the first one I've ever been to, and it took some getting used to, but I enjoyed it quite a bit. Back in the 1970s we'd have looked at the customers and called it a hippie place, but today's hippies are apparently well-off in order to afford the prices.
What impressed me was the quality of the food, and aside from no meat, and there was a lot of fried stuff so they weren't trying to cram 'healthy' at people - there were choices.

roasted cauliflower, asparagus, zucchini and penne pasta tossed in a pumpkin curry sauce, topped with chives and drizzled with yogurt
all-day breakfast sandwich* $11 vo gfo
fried egg or scrambled ^tofu, french fries, hot sauce aioli and cheddar cheese on a toasted pretzel bun
They charge $2.50 extra to put sandwiches on gluten free bread, and $1.50 more for gluten free flatbread.

I had:

refried beans, eggs or ^tofu, smothered in green chile, queso fresco, and cilantro. served with corn tortillas and potatoes or quinoa (add $1) - with eggs.
Next time I will have one of those other dishes.
