Banana Pudding

Our friend Jeri (elderjane) is on her cruise now. They celebrated Thanksgiving early and she told me one of the desserts was Paula Deen's Banana Pudding. I told her she made it sound so good I might make it for my own Thanksgiving.

However, looking at the recipe, I am probably going to chicken out because it calls for too many fattening ingredients. I'm not as overtly health conscious as some of you say you are, but I do have some limits. And it's not just the calories, some of it is that I don't like the artificial taste of mixes so if I did make it, I'd make the pudding from scratch, but then I'd never know how the original recipe was supposed to taste so it would be the same as not trying it at all.

Banana Pudding Paula Deen (aka Not Yo' Mama's)
2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

That looks soooo yummy! I might try it! (My mom makes an "easy and quick" banana pudding that can be "tweaked" to taste the way you like it. It works when time is a factor and it really is good when it's served nice and cold from the fridge, with or without whipped cream...I, of course, like it with the whipped cream. Just line a large, rectangular glass baking dish or square one if you want less with graham cracker squares... break each large piece from the package in half. Top the crackers with "wheel" slices of bananas and top that with pudding...either instant or "to cook" from a package or a quick one of your own that you like...make it vanilla, but add banana extract to taste, if you like. Some people will use banana pudding, but for those who don't want the "too strong, too much banana" taste, regular vanilla pudding with or without some banana extract will be just perfect. Top pudding with more "wheel" slices of bananas. Sprinkle or brush just a bit of lemon juice or orange juice to help keep the bananas from turning black. Chill, preferably no less than an hour, before serving. Serve in "squares", plain or topped with whipped cream. Note: I know for a nicer dessert look and treat, bananas and pudding can be alternately layered. This is a much better-tasting and eye-appealing way of serving/having the same dessert.)

Well the packages make it sound easy. But the best easy is to buy it made from a really good bakery. Yes, that is sounding better to me all the time. I had key lime pie after our friend Lila, visiting from New York, took us to dinner t'other night. I am still walking it off.

I love Paula Deen, too. However, I have a real problem with these celebrity cooks who use mixes. I don't care for them, either, and if I'm going to take in a ton of calories and fat grams, I want them to be from the real thing.
